Meringue:
Directions
For Cookies: Mold and flatten batter in hand and place on greased cookie sheet. Place in pre-heated 350-degree oven for 10 to 12 minutes. Take out of oven and let cool until ready to use.
For Pudding: Melt butter in sauce pan over medium high heat. In a bowl place 1 egg, ½ cup milk and corn starch and whip until smooth. Add remaining milk to sauce pan. Stir until thick and bubbly. Remove from heat and add vanilla flavoring and nutmeg. Mix together well. Reserve until layering bananas, cookie, pudding process begins. Meringue: In narrow bottomed bowl whip 3 egg whites until foamy. Add cream of tartar and 2 tbsp. sugar. Beat until stiff. Place on top of pudding forming peaks and bake in oven approx. 15 minutes or until browned. Can also add whipped cream topping.
