    Wash duck in cool water and vinegar then pat dry with paper towels. Add seasoning especially to the inside cavity and rub in very well. Place on rack and bake for 1 hour in pre-heated 325-degree oven. After 1 hour. Remove from oven and pierce skin, (not flesh) and pierce skin to release fat from duck just as before. Repeat this every hour until the bird reaches 165 internal temperature. I cooked my 5.5-pound duck for 4 hours. Google weight, temperature and cook time for the sized duck you choose. Also, if short on time you can raise oven temperature to 350 degrees and cook 3 hours.
