This recipe is for a delicious and easy breakfast dish, a Spinach, Egg and Cheese Bake. Perfect for a lazy weekend morning or a quick week day breakfast. It's packed with nutritious spinach, eggs, and cheese, baked to perfection in a casserole dish. Re-hydrate or thaw hash brown potatoes and set aside. (drain and towel dry hashbrown after re-hydrating) Microwave spinach for 2 or 3 minutes then drain and squeeze out as much liquid as possible, then set aside. Whisk well together 9 whole eggs and begin to add all other ingredients. Whisk or stir eggs while adding ingredients. Spray your cooking vessel with cooking oil spray. (you can use glass, muffin pan, cast iron or silicon. Place into pre-heated 350-degree oven and let bake approximately 40 minutes. Time will vary depending on the oven and the cooking vessel used. Use toothpick to check for doneness. If toothpick comes out clean remove from oven and serve warm/hot. Enjoy!
