Dressed Up Collard Greens

Can't make a New Year, Thanksgiving or Christmas holiday menu without adding collard greens so knock their socks off with this recipe.
Choose really, nice fresh greens from the market. Start slow cooker early using water or broth set on high. Add cooking meat and let cook for at least an hour. Meanwhile: Carefully look through and break/cut stems from green leaves. Discard any yellow or bad leaves. Roll like cigar and cut into pieces. Then wash and rinse cut leaves 3 times. (You can a little salt or vinegar to first wash if desired to cause any bugs to fall away from leaves). Add cut leaves to slow cooker pressing down with lid. Cook for 1 ½ hours on high and then begin to add all other ingredients. Cover and cook approximately 2 ½ to 3 hours more. Taste and add more seasoning or cooking time to your liking. Serve and enjoy! Soul food cooking.
