Process 2 lbs. of lamb and all seasonings, lemon juice and Dale’s seasoning through food processor until meat becomes totally blended almost paste like. Spray a cooking pan with vegetable spray, add lamb mixture and smooth top. Place in pre-heated 350 degree oven and bake for 40 to 50 minutes. Remove from oven and allow to cool for 20 minutes. Cut into semi-thin slices and brown on both sides in pan with little oil. Fill pocket bread with sauce, spinach, tomato and gyro meat and top with sauce and feta cheese. Serve and Enjoy!
