    Directions

    FOR MONKFISH: Clean and trim monkfish, dip into egg mixture, then place in seafood mixture and cover completely. Place on cookie sheet until ready to fry. Fry in deep fryer or in frying pan just make sure fish is covered in oil. Fish may also be cooked in air fryer. Cook until desired amount of golden brownness is achieved.

    Step 1

    FOR GRITS: Bring water to full boil in 3-quart boiler, add salt. Add grits stirring all while and turn heat down to low/medium and cover. Let cook for 5 minutes stirring a few times. Turn fire off, cover and let sit. Grits should be thick.

    Conclusion

    FOR KALE: Place oil into saucepan, then add greens a batch at a time until you get them all into pan. Stir and cook for about 30 minutes. While cooking, add chopped onions, all spices and stir. Set aside in a warm place until fish and grits are done.
